- 50g shimeji mushrooms (or a small handful)
- 1 cup coconut milk
Instructions
Follow these step-by-step instructions to prepare a rich and flavorful Vegetarian Curry that’s both hearty and satisfying.
1. Prepare the Curry Base
Heat a pan over medium heat and add 1 tablespoon of MindoFoods Curry Paste. Pour in 1 cup of water and stir well until the curry paste is fully dissolved, forming a smooth and fragrant base.
Let it simmer for 2–3 minutes to develop the flavors.
2. Cook the Ingredients
Add the mock meat to the pan and cook for 2–3 minutes on each side until lightly browned. Then, add the diced potatoes and let them cook for another 3–4 minutes until slightly tender.
3. Add Vegetables & Simmer
Next, add the tomato slices, golden thread mushrooms, white shimeji mushrooms, and shimeji mushrooms. Stir well and let them cook for 2 minutes.
Pour in 1 cup of coconut milk and gently stir to combine all the flavors. Let the curry simmer for 5–7 minutes, allowing the ingredients to absorb the rich, creamy broth.
4. Serve & Enjoy
Once everything is well combined and the potatoes are fully tender, remove from heat. Transfer the curry to a serving dish and enjoy your delicious, comforting meal!
