Vegetarian Mutton Curry Spaghetti Recipe

Ingredients for one serving

  • 100g vegetarian mutton (or adjust based on preference)
  • 1 tbsp MindoFoods Curry Paste
  • Enough water to fill a pot (for boiling the spaghetti)
  • 80–100g spaghetti (about one serving)
  • 1 cup coconut milk
  • 1 cup water (for the curry sauce)
  • 1 tbsp tomato sauce (adds a slight tangy sweetness)
  • 1–2 chili padi, chopped (adjust to spice preference)
  • 1 tbsp MindoFoods Belacan Paste (for an umami boost)

 

Instructions

Follow these simple steps to prepare a flavorful Mutton Curry Spaghetti.

 

1. Marinate the Vegetarian Mutton

Place the pre-made vegetarian mutton in a bowl. Add 1 tablespoon of MindoFoods Curry Paste and mix well, ensuring the pieces are evenly coated.

Marinate for at least 10 minutes to let the flavors absorb. If you prefer a stronger taste, you can leave it for up to 30 minutes.

2. Cook the Spaghetti

Bring a pot of water to a boil. Once boiling, add the spaghetti and cook for 8–10 minutes, or until it reaches your preferred texture.

If you prefer an al dente texture, cook it for about 1–2 minutes less than the recommended time—the pasta should be firm but not hard in the center.

Once cooked, drain the spaghetti using a strainer and shake off excess water. Set aside.

 

3. Prepare the Curry Sauce

Using the same pot, add 1 cup of coconut milk, 1 cup of water, and 1 tablespoon of MindoFoods Belacan Paste.

Stir well and bring the mixture to a gentle simmer over medium heat. Then, add in the marinated vegetarian mutton and let it cook for 5 minutes, stirring occasionally.

 

4. Combine Everything

Once the mutton has absorbed the flavors, add 1 tablespoon of tomato sauce and stir until well blended. Then, toss in the cooked spaghetti and mix everything together.

Add 1–2 chopped chili padi and another 1 tablespoon of MindoFoods Belacan Paste. Stir with tongs until the spaghetti is fully coated in the sauce and evenly mixed.

 

5. Serve and Enjoy
